Development of Kencur Extract Ice Cream Formula (Kaempheria Galanga L) as an Anti-Inflammatory in Obesity Adolescents

Background: Metabolic syndrome associated with indicators of inflammation such as C-Reactive Protein (CRP). Elevated CRP levels in obese adolescents is an indicator metabolic disorders. Giving kencur extract to disorders can reduce levels. Increasing the acceptance be done by supplementing ice cream. The aim research was obtain supplementation cream products, best physical, chemical and organoleptic characteristics. It hoped that this used anti-inflammatory adolescents. Research methods: design Completely Randomized Design. There are 5 treatments Each treatment a volume 250 ml. physical properties were observed. statistical test determine differences ANOVA. While Friedman test. result: All had pH 7. Dissolved solids ranged from 43.5% - 44.58%. viscosity ranges 0.355 mN,m 0.517mN,m. Ice overrun 110% 168%. melting speed 5.75 minutes 8.975 minutes. content energy, protein, fat carbohydrates. more addition cream, less preferred it is. Conclusion: high acceptability one added 2700 mg 2900 extract.
